Zesty Quinoa and Black Bean Salad

Servings: 4 | 30 minutes | 350 kcal

This recipe was invented in my own kitchen. As a master cook, I always love to experiment with different ingredients and cooking methods. One day, I decided to create a dish that would be both delicious and vegan-friendly, and that' how this recipe was born.

With this recipe, I wanted to prove that vegan cuisine can be just as comforting and tasty as traditional cuisine. The inspiration came from my vegan friend who wanted to enjoy a meal as hearty as a meat eater'.

Ingredients

  • 1 cups Quinoa
  • 400 grams Black Beans
  • 2 cups Fresh Spinach
  • 1 pieces Avocado
  • 1 pieces Red Bell Pepper
  • 2 teaspoons Olive Oil
  • 1 teaspoons Salt
  • 1 teaspoons Pepper
  • 1 teaspoons Lime Juice

Instructions

  1. Cook the quinoa according to the package instructions.
  2. In the meantime, heat up the oil in a pan, add the chopped bell pepper, and sauté it.
  3. Add the black beans and spinach to the pan and continue to cook until the spinach is wilted.
  4. In a bowl, combine the cooked quinoa, bean and spinach mixture, diced avocado, lime juice, salt, and pepper.
  5. Stir everything well and serve with additional lime wedges if desired.
