Vegan Cherry Almond Granola Bars with Dark Chocolate

These granola bars were born from my love for cherries and chocolate. I was inspired by my childhood memory of cherry chocolate ice cream. Now, I have brought these flavors into a healthy, portable snack that' easy to carry and even easier to enjoy.

Ingredients

  • 2 cups Rolled Oats
  • 1 cup Almonds
  • 1 cup Dried Cherries
  • 1/2 cup Dark Chocolate
  • 1/2 cup Maple Syrup
  • 1/4 cup Natural Peanut Butter
  • 2 teaspoons Chia Seeds

Instructions

  1. Preheat the oven to 350°F (175°C). Spread the oats and almonds on a baking sheet and toast for 10-15 minutes, stirring occasionally.
  2. While the oats and almonds are toasting, chop the dried cherries and dark chocolate into small pieces.
  3. In a saucepan over medium heat, combine the maple syrup and peanut butter. Stir until well combined and heated through.
  4. Once the oats and almonds are toasted, transfer them to a large bowl. Add the chopped cherries, dark chocolate, and chia seeds. Pour the heated maple syrup and peanut butter mixture over the top. Stir well, ensuring every bit is coated.
  5. Line a baking dish with parchment paper. Press the mixture firmly into the dish, creating an even layer. Let it cool completely, then cut into bars. Enjoy!
