Thai Peanut Noodles with Tofu

This recipe is derived from the traditional Pad Thai tossed with peanuts, which is a popular dish in Thailand. It has been modified to replace the usual meat with tofu, making it a delicious and nutritious vegan option.

I once made this dish for a renowned food critic who was skeptical about vegan cuisine. Upon tasting it, he was astounded by the explosion of flavors and admitted it was one of the best vegan meals he'd ever had.

Ingredients

  • 200 grams Dried Rice Noodles
  • 200 grams Firm Tofu
  • 2 tablespoons Peanut Butter
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Brown Sugar
  • 2 pieces Garlic
  • 1 cup Chopped Peanuts
  • 2 pieces Spring Onions
  • 1 tablespoon Lime juice

Instructions

  1. Soak the dried rice noodles according to the package instructions, then drain and set aside.
  2. Press the tofu to remove excess moisture, then cut into cubes.
  3. In a pan, stir-fry the tofu until golden on all sides, then remove from the pan and set aside.
  4. In the same pan, add the peanut butter, soy sauce, brown sugar, and minced garlic. Stir well until combined.
  5. Add the drained noodles to the pan and toss to coat them in the sauce.
  6. Add the tofu back into the pan and stir well to combine.
  7. Serve the noodles topped with the chopped peanuts, chopped spring onions, and a squeeze of fresh lime juice.
