This recipe is a vegan twist on the classic Korean BBQ sliders. The use of jackfruit as a meat substitute is a fairly recent trend in vegan cooking, and combining it with traditional Korean flavors seemed like a natural fit.
When I first stumbled upon jackfruit at the local market, I was intrigued by its size and spikey exterior. After some experimentation, I discovered it had a 'pulled pork' like texture when cooked - perfect for vegan dishes!
Ingredients
- 2 cups Canned green jackfruit in brine
- 1 cup Korean BBQ sauce
- 1 teaspoon Sesame oil
- 12 pieces Slider buns
- 1 pieces Cucumber
- 2 pieces Green onions
Instructions
- Drain and rinse the jackfruit. Shred it into pieces.
- Heat sesame oil in a skillet over medium heat. Add the jackfruit and sauté until it starts to brown.
- Add BBQ sauce and reduce heat to low. Simmer for 20-30 minutes, stirring occasionally until jackfruit has absorbed the sauce.
- While jackfruit is cooking, slice the cucumber and green onions for garnish.
- Toast the slider buns lightly, if desired.
- Spoon a generous helping of BBQ jackfruit onto each bun. Top with cucumber and green onions.
- Serve warm and enjoy!
