The concept of 'Buddha Bowl' is a modern invention, mainly popularized within the vegan and health-conscious communities. The name is derived from the concept of a bowl filled with wholesome food being a 'Buddha-like' diet.
A friend of mine who' a vegan shared this recipe with me and it became an instant hit in my kitchen! It' a beautiful blend of vibrant colors and diverse textures, offering a 'rainbow' of nutrients in each serving.
Ingredients
- 1 cups cooked quinoa
- 1 cups chickpeas
- 2 cups spinach
- 1 cups carrots
- 1 cups beets
- 1 pieces avocado
- 2 teaspoons sesame seeds
- 2 teaspoons olive oil
Instructions
- Cook the quinoa according to package instructions and set aside.
- Rinse and drain the chickpeas thoroughly, pat dry with a clean kitchen towel.
- Slice the carrots and beets into thin rounds, drizzle with olive oil and roast in the oven at 400°F until tender and slightly caramelized.
- Cube the avocado and set aside.
- To assemble the bowls, start with a base of cooked quinoa, then arrange the spinach, roasted vegetables, chickpeas, and avocado on top.
- Sprinkle with sesame seeds and drizzle with your favorite dressing just before serving.
