The Buddha bowl concept has roots in many cuisines around the world, including Japanese (a traditional 'donburi' rice bowl) and Hawaiian (a 'poke' fish bowl). It is however a modern western invention and has gained popularity in the recent years due to its health and wellness aspect.
Buddha bowls are so named because of their big, round shape, similar to the belly of Buddha. They are filled to the brim with vibrant and nourishing foods that make you feel just as good as they taste!
Ingredients
- 1 cups quinoa
- 400 grams chickpeas
- 2 pieces rainbow bell peppers
- 1 pieces avocado
- 2 cups spinach
- 1 teaspoons sesame seeds
Instructions
- Cook the quinoa as per the instructions on the package.
- Drain and rinse the chickpeas, then roast them in the oven with a drizzle of olive oil and your favorite spices until crispy.
- Slice the bell peppers and avocado, and sauté the peppers until they're slightly softened.
- Arrange the cooked quinoa, roasted chickpeas, sautéed peppers, avocado slices, and fresh spinach in a large bowl.
- Top it all off with a sprinkle of sesame seeds and a drizzle of your favorite dressing.
