The concept of Buddha Bowls has been popular in the vegan and health-conscious community for quite a while now. While there' no definitive origin, they're believed to be inspired by the Buddhist practice of eating a simple, plant-based diet.

Named after the rounded belly of Buddha, a Buddha Bowl is a colorful, filling dish loaded with raw or roasted veggies, grains, and legumes. This particular recipe was inspired by a beautiful rainbow, thus the name 'Rainbow Buddha Bowl'.

Ingredients

  • 1 cups Quinoa
  • 1 pieces Purple cabbage
  • 1 pieces Red bell pepper
  • 2 pieces Carrots
  • 2 pieces Avocados
  • 200 grams Hummus
  • 1 pieces Lemon
  • 2 teaspoons Olive oil

Instructions

  1. Cook the quinoa according to the package instructions and set aside.
  2. Thinly slice the purple cabbage, red bell pepper, and carrots.
  3. Cut the avocados into halves and remove the stone. Slice the halves.
  4. Assemble your Buddha bowl. Start with a base of quinoa, then add rows of your sliced veggies. Add a dollop of hummus in the center.
  5. Squeeze the lemon over the bowl and drizzle with olive oil.
  6. Enjoy your colorful and nutritious Vegan Rainbow Buddha Bowl!
