Rainbow Buddha Bowl

Buddha Bowls, also known as 'Hippie Bowls', started to become popular in the vegan community around the mid-2010s. They are often associated with balanced eating because of their variety of ingredients.

While visiting a vegan restaurant in California, I came across this beautiful dish called a Buddha Bowl. Its vibrant colors and the variety of ingredients were so appealing that I decided to create my own version.

Ingredients

  • 1 cups cooked quinoa
  • 2 cups spinach
  • 1 cups chickpeas
  • 1 pieces beets
  • 1 pieces carrots
  • 1 cups red cabbage
  • 1 pieces avocado
  • 1 teaspoons sesame seeds
  • 2 teaspoons lemon juice
  • 2 teaspoons olive oil

Instructions

  1. Start by preparing your vegetables. Slice the beets and carrots into thin strips, shred the cabbage, and slice the avocado.
  2. Next, arrange your ingredients into a bowl. Start with a base of spinach and quinoa, then arrange the vegetables and chickpeas on top in separate sections.
  3. Drizzle the olive oil and lemon juice over the top of the bowl, then sprinkle with sesame seeds.
  4. Enjoy your Vegan Rainbow Buddha Bowl!
