Buddha Bowls, also known as 'Hippie Bowls', started to become popular in the vegan community around the mid-2010s. They are often associated with balanced eating because of their variety of ingredients.
While visiting a vegan restaurant in California, I came across this beautiful dish called a Buddha Bowl. Its vibrant colors and the variety of ingredients were so appealing that I decided to create my own version.
Ingredients
- 1 cups cooked quinoa
- 2 cups spinach
- 1 cups chickpeas
- 1 pieces beets
- 1 pieces carrots
- 1 cups red cabbage
- 1 pieces avocado
- 1 teaspoons sesame seeds
- 2 teaspoons lemon juice
- 2 teaspoons olive oil
Instructions
- Start by preparing your vegetables. Slice the beets and carrots into thin strips, shred the cabbage, and slice the avocado.
- Next, arrange your ingredients into a bowl. Start with a base of spinach and quinoa, then arrange the vegetables and chickpeas on top in separate sections.
- Drizzle the olive oil and lemon juice over the top of the bowl, then sprinkle with sesame seeds.
