As I became more conscious about healthy eating and the environmental impact of my food choices, I started experimenting with vegan alternatives. This recipe is the result of my culinary explorations.
This recipe was created during my exploration of vegan cuisine. I was blown away by the flavors that could be achieved without the use of any animal products.
Ingredients
- 1 cups Quinoa
- 200 grams Chickpeas
- 1 pieces Avocado
- 1 teaspoons Cumin
- 1 pieces Lime
- 2 teaspoons Olive oil
- to taste grams Salt
- to taste grams Black pepper
Instructions
- Start by cooking the quinoa according to the package instructions.
- While the quinoa is cooking, drain and rinse the chickpeas. Then, in a large bowl, mix the chickpeas with cumin, olive oil, salt, and pepper.
- Dice the avocado and squeeze the lime over it to prevent it from browning.
- Once the quinoa is done, fluff it with a fork and let it cool.
- Combine the quinoa, chickpeas, and avocado in a bowl. Drizzle with a little more olive oil, if desired, and serve.
