Quinoa and Chickpea Salad

As I became more conscious about healthy eating and the environmental impact of my food choices, I started experimenting with vegan alternatives. This recipe is the result of my culinary explorations.

This recipe was created during my exploration of vegan cuisine. I was blown away by the flavors that could be achieved without the use of any animal products.

Ingredients

  • 1 cups Quinoa
  • 200 grams Chickpeas
  • 1 pieces Avocado
  • 1 teaspoons Cumin
  • 1 pieces Lime
  • 2 teaspoons Olive oil
  • to taste grams Salt
  • to taste grams Black pepper

Instructions

  1. Start by cooking the quinoa according to the package instructions.
  2. While the quinoa is cooking, drain and rinse the chickpeas. Then, in a large bowl, mix the chickpeas with cumin, olive oil, salt, and pepper.
  3. Dice the avocado and squeeze the lime over it to prevent it from browning.
  4. Once the quinoa is done, fluff it with a fork and let it cool.
  5. Combine the quinoa, chickpeas, and avocado in a bowl. Drizzle with a little more olive oil, if desired, and serve.
