Ingredients
- 2 cups Young Jackfruit
- 1 tbsp Olive Oil
- 1 tsp Cumin Powder
- 1/2 tsp Smoked Paprika
- 1 tsp Chili Powder
- 1/2 tsp Garlic Powder
- 1/4 tsp Salt
- 1/2 cup Vegan Sour Cream
- 1/4 cup Lime Juice
- 1/4 cup Cilantro, chopped
- 1/2 small Red Onion, chopped
- 8 small Corn Tortillas
Instructions
- Drain and rinse the jackfruit.
- Heat olive oil in a pan over medium-high heat.
- Add the jackfruit, cumin, smoked paprika, chili powder, garlic powder, and salt. Sauté for 5-6 minutes until the jackfruit is tender and browned.
- In a small bowl, mix the vegan sour cream, lime juice, cilantro, and red onion.
- Warm the tortillas in a pan or microwave and assemble the tacos with the jackfruit and sour cream mixture.
- Serve hot and enjoy!
