Jackfruit Tacos

Ingredients

  • 2 cups Young Jackfruit
  • 1 tbsp Olive Oil
  • 1 tsp Cumin Powder
  • 1/2 tsp Smoked Paprika
  • 1 tsp Chili Powder
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Salt
  • 1/2 cup Vegan Sour Cream
  • 1/4 cup Lime Juice
  • 1/4 cup Cilantro, chopped
  • 1/2 small Red Onion, chopped
  • 8 small Corn Tortillas

Instructions

  1. Drain and rinse the jackfruit.
  2. Heat olive oil in a pan over medium-high heat.
  3. Add the jackfruit, cumin, smoked paprika, chili powder, garlic powder, and salt. Sauté for 5-6 minutes until the jackfruit is tender and browned.
  4. In a small bowl, mix the vegan sour cream, lime juice, cilantro, and red onion.
  5. Warm the tortillas in a pan or microwave and assemble the tacos with the jackfruit and sour cream mixture.
  6. Serve hot and enjoy!
