Jackfruit Tacos

Ingredients

  • 1 can jackfruit, drained and rinsed
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/2 cup water
  • 8 corn tortillas
  • 1 avocado pitted and sliced
  • 1/4 cup chopped fresh cilantro
  • 1 lime cut into wedges

Instructions

  1. Preheat the oven to 400°F.
  2. In a large bowl, whisk together the smoked paprika, garlic powder, cumin, salt, and water.
  3. Add the jackfruit to the bowl and use your hands to break it apart until it resembles pulled pork.
  4. Transfer the jackfruit and any remaining marinade to a baking dish and bake for 20-25 minutes, or until slightly crispy.
  5. While the jackfruit is baking, warm the tortillas in the oven or on the stovetop.
  6. To assemble the tacos, place a few spoonfuls of jackfruit on each tortilla and top with sliced avocado, chopped cilantro, and a squeeze of lime juice.
