Ingredients
- 1 can jackfruit, drained and rinsed
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/2 cup water
- 8 corn tortillas
- 1 avocado pitted and sliced
- 1/4 cup chopped fresh cilantro
- 1 lime cut into wedges
Instructions
- Preheat the oven to 400°F.
- In a large bowl, whisk together the smoked paprika, garlic powder, cumin, salt, and water.
- Add the jackfruit to the bowl and use your hands to break it apart until it resembles pulled pork.
- Transfer the jackfruit and any remaining marinade to a baking dish and bake for 20-25 minutes, or until slightly crispy.
- While the jackfruit is baking, warm the tortillas in the oven or on the stovetop.
- To assemble the tacos, place a few spoonfuls of jackfruit on each tortilla and top with sliced avocado, chopped cilantro, and a squeeze of lime juice.
