This recipe was created as a vegan alternative to the classic pulled pork sandwich, using jackfruit as a stand-in for the pork.
One day, I was challenged by a vegan friend to recreate a classic pulled pork sandwich, but without any animal products. The result was this recipe, which even my non-vegan friends loved!
Ingredients
- 2 cups young green jackfruit in water
- 1.5 cups BBQ sauce
- 1 pieces onion
- 2 pieces garlic
- 1 cups vegan mayonnaise
- 0.5 pieces white cabbage
- 1 pieces carrot
- 4 pieces vegan buns
- to taste grams salt
- to taste grams black pepper
Instructions
- Drain and rinse the jackfruit, then cut out the core and remove the seeds.
- In a pan, sauté the onion and garlic until they're soft. Add the jackfruit and BBQ sauce and stir well.
- Cover the pan and simmer for about 20 minutes, until the jackfruit is tender and has absorbed the flavours of the sauce.
- While the jackfruit is simmering, prepare the coleslaw. Shred the cabbage and carrot, then mix with the vegan mayonnaise, and season with salt and pepper.
- When the jackfruit is ready, use a fork to pull it apart until it resembles pulled pork. If it' too dry, add a bit more BBQ sauce.
- Toast the buns, then spread a generous amount of jackfruit on one half and top with coleslaw. Serve immediately.
