This recipe was developed during one of my culinary trips to the Middle East. The vibrant flavors of the region inspired me to create a dish that can be enjoyed by vegans and non-vegans alike.
Having been to various culinary trips, I have developed this unique vegan recipe that combines the richness of Middle Eastern flavors with the heartiness of Western comfort food.
Ingredients
- 400 grams Chickpeas
- 1 cups Quinoa
- 2 cups Vegetable broth
- 1 pieces Onion
- 3 pieces Garlic
- 2 teaspoons Olive oil
- 2 cups Spinach
- 1 pieces Lemon
- to taste grams Salt
- to taste grams Pepper
Instructions
- Rinse the quinoa under cold water and drain.
- In a large saucepan, heat the olive oil over medium heat. Add the onion and garlic, and sauté until they are softened.
- Add the quinoa to the saucepan and cook for a couple of minutes, stirring frequently.
- Pour in the vegetable broth, bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is tender.
- Stir in the chickpeas and spinach and cook until the spinach is wilted.
- Season with salt and pepper, and squeeze the lemon over the top before serving. Enjoy your hearty and flavorful vegan dish!
