Hearty Quinoa and Chickpea Stew

This recipe was developed during one of my culinary trips to the Middle East. The vibrant flavors of the region inspired me to create a dish that can be enjoyed by vegans and non-vegans alike.

Having been to various culinary trips, I have developed this unique vegan recipe that combines the richness of Middle Eastern flavors with the heartiness of Western comfort food.

Ingredients

  • 400 grams Chickpeas
  • 1 cups Quinoa
  • 2 cups Vegetable broth
  • 1 pieces Onion
  • 3 pieces Garlic
  • 2 teaspoons Olive oil
  • 2 cups Spinach
  • 1 pieces Lemon
  • to taste grams Salt
  • to taste grams Pepper

Instructions

  1. Rinse the quinoa under cold water and drain.
  2. In a large saucepan, heat the olive oil over medium heat. Add the onion and garlic, and sauté until they are softened.
  3. Add the quinoa to the saucepan and cook for a couple of minutes, stirring frequently.
  4. Pour in the vegetable broth, bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is tender.
  5. Stir in the chickpeas and spinach and cook until the spinach is wilted.
  6. Season with salt and pepper, and squeeze the lemon over the top before serving. Enjoy your hearty and flavorful vegan dish!
