Colorful Quinoa and Black Bean Salad

Servings: 4 | 30 minutes | 400 kcal

Created by myself, Master Cook, after a friendly challenge to create an innovative and satisfying vegan dish.

I came up with this recipe after a challenge by one of my students to create a dish that' hearty, vegan, and keeps you coming back for more. It has since become a favorite among my friends and family, vegan or not.

Ingredients

  • 1 cups Quinoa
  • 1 cups Black beans
  • 1 pieces Red bell pepper
  • 1 cups Corn kernels
  • 1 pieces Avocado
  • 1 cups Cherry tomatoes
  • 2 teaspoons Cilantro
  • 2 teaspoons Lime juice
  • 2 teaspoons Olive oil
  • to taste grams Salt and pepper

Instructions

  1. Cook the quinoa as per the instructions on the packet and set it aside.
  2. Meanwhile, chop the red bell pepper, avocado and cherry tomatoes into bite-sized pieces.
  3. In a large bowl, combine the cooked quinoa, chopped vegetables, corn and black beans.
  4. In a smaller bowl, whisk together the lime juice, olive oil, and cilantro to create a simple dressing.
  5. Pour the dressing over the quinoa and vegetable mixture and toss well to combine.
  6. Season with salt and pepper, to taste.
  7. Serve immediately, or refrigerate for an hour before serving to allow the flavors to meld together.
