Created by myself, Master Cook, after a friendly challenge to create an innovative and satisfying vegan dish.
I came up with this recipe after a challenge by one of my students to create a dish that' hearty, vegan, and keeps you coming back for more. It has since become a favorite among my friends and family, vegan or not.
Ingredients
- 1 cups Quinoa
- 1 cups Black beans
- 1 pieces Red bell pepper
- 1 cups Corn kernels
- 1 pieces Avocado
- 1 cups Cherry tomatoes
- 2 teaspoons Cilantro
- 2 teaspoons Lime juice
- 2 teaspoons Olive oil
- to taste grams Salt and pepper
Instructions
- Cook the quinoa as per the instructions on the packet and set it aside.
- Meanwhile, chop the red bell pepper, avocado and cherry tomatoes into bite-sized pieces.
- In a large bowl, combine the cooked quinoa, chopped vegetables, corn and black beans.
- In a smaller bowl, whisk together the lime juice, olive oil, and cilantro to create a simple dressing.
- Pour the dressing over the quinoa and vegetable mixture and toss well to combine.
- Season with salt and pepper, to taste.
- Serve immediately, or refrigerate for an hour before serving to allow the flavors to meld together.
