Jackfruit is a tropical fruit native to Southeast Asia. Its meaty texture and flavor make it an excellent meat substitute for vegan and vegetarian diets.
These tacos are a hit in our family and a great addition to any BBQ or Mexican-themed dinner.
Ingredients
- 2 cups Young Jackfruit
- 1/2 onion Onion
- 1/2 tsp Garlic powder
- 1/2 tsp Smoked paprika
- 1/2 tsp Cumin
- 1/2 tsp Salt
- 1/2 cup BBQ sauce
- 8 taco shells Taco shells
- 1/2 cup Chopped cilantro
- 1/2 cup Chopped red cabbage
- 1/2 cup Chopped tomatoes
Instructions
- Rinse and drain jackfruit.
- Remove the seeds and shred the jackfruit with your fingers.
- Chop 1/2 onion and sauté on medium heat until lightly browned.
- Add shredded jackfruit and cook for 5 minutes.
- Add garlic powder, smoked paprika, cumin, and salt.
- Cook for an additional 5 minutes.
- Add BBQ sauce and stir until fully coated.
- Cook for a few more minutes until the jackfruit is warm and fully infused with the BBQ sauce.
- Heat the taco shells.
- Fill each taco with jackfruit mixture and top with chopped cilantro, red cabbage, and tomatoes.
