Pasta dishes are always a hit, but sometimes you want something on the lighter side. Enter zucchini noodles, or 'zoodles', a great low-carb alternative to pasta. Topped with the creamy avocado pesto, it' a vegan delight!
Ingredients
- 2 pieces zucchini
- 1 pieces ripe avocado
- 1 cups fresh basil leaves
- 2 pieces garlic
- 2 teaspoons lemon juice
- 2 teaspoons olive oil
- to taste salt
- to taste black pepper
- 1/4 cups pine nuts
- 1 cups cherry tomatoes
Instructions
- Spiralize the zucchinis and set them aside.
- In a food processor, combine the avocado, basil, garlic, lemon juice, olive oil, salt and pepper. Process until smooth.
- Toss the spiralized zucchini with the avocado pesto until fully coated.
- Serve the zucchini noodles topped with pine nuts and cherry tomatoes.
