Zucchini Noodles with Creamy Avocado Pesto

Pasta dishes are always a hit, but sometimes you want something on the lighter side. Enter zucchini noodles, or 'zoodles', a great low-carb alternative to pasta. Topped with the creamy avocado pesto, it' a vegan delight!

Ingredients

  • 2 pieces zucchini
  • 1 pieces ripe avocado
  • 1 cups fresh basil leaves
  • 2 pieces garlic
  • 2 teaspoons lemon juice
  • 2 teaspoons olive oil
  • to taste salt
  • to taste black pepper
  • 1/4 cups pine nuts
  • 1 cups cherry tomatoes

Instructions

  1. Spiralize the zucchinis and set them aside.
  2. In a food processor, combine the avocado, basil, garlic, lemon juice, olive oil, salt and pepper. Process until smooth.
  3. Toss the spiralized zucchini with the avocado pesto until fully coated.
  4. Serve the zucchini noodles topped with pine nuts and cherry tomatoes.
