Vegan Teriyaki Tofu Skewers with Pineapple

I once served these skewers at a summer party, and the guests, even the non-vegans, were thrilled. The best part? They had no idea it was tofu!

Ingredients

  • 400 grams firm tofu
  • 1 pieces pineapple
  • 50 ml soy sauce
  • 2 teaspoons brown sugar
  • 2 pieces garlic
  • 1 teaspoons ginger
  • 1 teaspoons cornstarch

Instructions

  1. Press tofu to remove excess water and cut into cubes.
  2. Cut pineapple into similar sized chunks.
  3. Make the teriyaki sauce: In a small pot, combine soy sauce, brown sugar, minced garlic, grated ginger, and a bit of water. Bring to a boil and simmer until the sugar is dissolved. Mix cornstarch with a little water to make a slurry and add to the pot. Simmer until sauce thickens.
  4. Marinate tofu in the teriyaki sauce for at least 30 minutes.
  5. Thread tofu and pineapple alternately onto skewers.
  6. Grill skewers until tofu is golden and pineapple is slightly charred, brushing with extra teriyaki sauce as they cook.
  7. Serve hot, garnished with sesame seeds and chopped spring onions.
