I once served these skewers at a summer party, and the guests, even the non-vegans, were thrilled. The best part? They had no idea it was tofu!
Ingredients
- 400 grams firm tofu
- 1 pieces pineapple
- 50 ml soy sauce
- 2 teaspoons brown sugar
- 2 pieces garlic
- 1 teaspoons ginger
- 1 teaspoons cornstarch
Instructions
- Press tofu to remove excess water and cut into cubes.
- Cut pineapple into similar sized chunks.
- Make the teriyaki sauce: In a small pot, combine soy sauce, brown sugar, minced garlic, grated ginger, and a bit of water. Bring to a boil and simmer until the sugar is dissolved. Mix cornstarch with a little water to make a slurry and add to the pot. Simmer until sauce thickens.
- Marinate tofu in the teriyaki sauce for at least 30 minutes.
- Thread tofu and pineapple alternately onto skewers.
- Grill skewers until tofu is golden and pineapple is slightly charred, brushing with extra teriyaki sauce as they cook.
- Serve hot, garnished with sesame seeds and chopped spring onions.
