The origin of the salsa is traced back to the Aztecs, Mayans, and Incas. This version, however, gets a tropical twist with the addition of mangoes. The pairing of salsa with tortilla chips is a classic, dating back to the early 1940s in Los Angeles.
Ever since I served this salsa at a summer gathering, guests keep asking me for the recipe. It' fruity, spicy, and incredibly addictive!
Ingredients
- 2 pieces ripe mangoes
- 1 piece red onion
- 1 piece jalapeno
- 1 cup cilantro
- 2 tablespoons lime juice
- 1/2 teaspoon salt
- 12 pieces corn tortillas
- 2 tablespoons olive oil
Instructions
- Peel and dice the mangoes. Dice the red onion. Finely chop the jalapeno and cilantro.
- In a bowl, combine the mango, onion, jalapeno, cilantro, lime juice, and salt. Stir until well combined. Let the salsa sit for at least 30 minutes to allow the flavors to meld together.
- Preheat your oven to 375 degrees F (190 degrees C).
- Brush both sides of the tortillas with olive oil and cut them into wedges.
- Spread the tortilla wedges out on a baking sheet in a single layer. Bake for 10-15 minutes, or until crispy and golden brown.
- Serve the homemade tortilla chips with the mango salsa. Enjoy!
