Spinach and Chickpea Curry

Servings: 4 | 30 minutes | 350 kcal

This recipe was inspired by traditional Indian cuisine. The spices and flavors are adjusted to suit a vegan diet without compromising on taste.

This dish is a favorite in my family. Even the meat-lovers can't resist this delicious vegan dish!

Ingredients

  • 2 cups Chickpeas
  • 3 cups Spinach
  • 1 cups Coconut milk
  • 1 pieces Onion
  • 2 pieces Garlic
  • 1 teaspoons Ginger
  • 2 teaspoons Curry powder
  • 1 teaspoons Turmeric
  • 1 teaspoons Chilli powder
  • to taste Salt
  • 2 teaspoons Olive oil

Instructions

  1. Heat the olive oil in a pan and sauté the onions until golden brown.
  2. Add the garlic and ginger and cook until fragrant.
  3. Add the curry powder, turmeric, and chili powder and stir to combine.
  4. Add the chickpeas and spinach and stir until the spinach has wilted.
  5. Add the coconut milk and salt, stir, and let the mixture simmer for about 20 minutes until the flavors have melded together.
  6. Serve warm with rice or bread.
