Ingredients
- 2 cups Chickpeas
- 3 cups Spinach
- 1 cups Coconut milk
- 1 pieces Onion
- 2 pieces Garlic
- 1 teaspoons Ginger
- 2 teaspoons Curry powder
- 1 teaspoons Turmeric
- 1 teaspoons Chilli powder
- to taste Salt
- 2 teaspoons Olive oil
Instructions
- Heat the olive oil in a pan and sauté the onions until golden brown.
- Add the garlic and ginger and cook until fragrant.
- Add the curry powder, turmeric, and chili powder and stir to combine.
- Add the chickpeas and spinach and stir until the spinach has wilted.
- Add the coconut milk and salt, stir, and let the mixture simmer for about 20 minutes until the flavors have melded together.
- Serve warm with rice or bread.
