Spicy Thai Tofu Curry with Coconut Milk and Jasmine Rice

Thai cuisine is renowned for its aromatic combinations and spicy undertones. This dish is a vegan spin on the traditional Thai curry, replacing meat with tofu while retaining the trademark Thai spice.

Who says vegan cuisine has to be bland? This Spicy Thai Tofu Curry will delight your palate with its bold, exciting flavors and creamy coconut milk. It' the perfect dish for a cozy night in or a dinner party with friends.

Ingredients

  • 400 grams Tofu
  • 400 ml Coconut Milk
  • 3 teaspoons Red Thai Curry Paste
  • 2 cups Jasmine Rice
  • 2 cups Vegetable Broth
  • 2 cups Mixed Vegetables
  • 10 pieces Fresh Basil Leaves

Instructions

  1. Press and drain the tofu, then cut it into cubes.
  2. In a large pan, sauté the tofu until it’s slightly browned.
  3. Add the curry paste and cook for another 2 minutes.
  4. Pour in the coconut milk and vegetable broth.
  5. Add the mixed vegetables and let the curry simmer for 15 minutes.
  6. In the meantime, cook the jasmine rice according to the package instructions.
  7. Serve your spicy Thai tofu curry over jasmine rice, garnished with fresh basil.
