Spicy Jackfruit Tacos

Jackfruit is a tropical fruit that is native to India and is now popular in vegan diets due to its delicious taste and texture. This recipe is a vegan variation of traditional Mexican tacos.

Jackfruit is the largest tree-borne fruit in the world, and can weigh up to 100 pounds! Its flavor is often described as a mix of banana, mango, and pineapple.

Ingredients

  • 2 cups Jackfruit
  • 1 tbsp Olive oil
  • 1 tsp Cumin
  • 1 tbsp Chili powder
  • 1/2 tsp Garlic powder
  • 1/2 tsp Onion powder
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1/4 cup Water
  • 8 taco shells Taco shells
  • 1 cup Shredded lettuce
  • 1/2 cup Diced tomatoes
  • 1/2 cup Diced onions
  • 1/4 cup Chopped cilantro
  • 1/4 cup Diced avocado

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the jackfruit and cook for 2-3 minutes.
  3. Sprinkle cumin, chili powder, garlic powder, onion powder, salt, and pepper over the jackfruit and stir well.
  4. Add water and stir to combine.
  5. Reduce heat to low, cover the skillet, and simmer for 10 minutes.
  6. Preheat the taco shells in the oven according to package instructions.
  7. Assemble tacos by adding the jackfruit mixture, shredded lettuce, diced tomatoes, diced onions, chopped cilantro, and diced avocado to each taco shell.
  8. Serve immediately and enjoy!
