Quinoa Rainbow Stir-Fry

Ingredients

  • 1 cups quinoa
  • 1 pieces red bell pepper
  • 1 pieces orange bell pepper
  • 1 pieces yellow bell pepper
  • 1 pieces green bell pepper
  • 1 pieces red onion
  • 2 pieces garlic
  • 2 teaspoons olive oil
  • 2 teaspoons soy sauce
  • 1 teaspoons sesame seeds

Instructions

  1. Cook the quinoa according to package instructions and set aside.
  2. Heat the olive oil in a skillet over medium heat.
  3. Sauté garlic and onions until they become translucent.
  4. Add the bell peppers and stir-fry for about 5-6 minutes until they are tender.
  5. Mix in the cooked quinoa and soy sauce.
  6. Continue to stir-fry for another 2-3 minutes.
  7. Garnish with sesame seeds before serving.
