Quinoa Mushroom Spinach Stir Fry

This recipe was not invented by a particular person but is a result of my culinary experiments in vegan cooking. The objective was to prepare a dish that is not only nutritious and vegan but also extremely mouth-watering.

This recipe was inspired by a challenge I took to create a dish that would surprise even the most critical non-vegan foodie. And guess what? They were astonished to know it was completely plant-based!

Ingredients

  • 1 cups Quinoa
  • 200 grams Mushrooms
  • 100 grams Spinach
  • 3 pieces Garlic
  • 2 teaspoons Olive oil
  • 1 teaspoons Soy sauce
  • 2 teaspoons Nutritional yeast
  • to taste grams Salt and pepper

Instructions

  1. Cook quinoa according to the package instructions and keep it aside.
  2. Heat a pan and add olive oil to it. Once the oil is hot, add chopped garlic and sauté until it turns golden brown.
  3. Add chopped mushrooms to the pan and cook until they are completely done.
  4. Now add spinach and cook until it wilts. Add soy sauce, nutritional yeast, and seasoning. Mix everything well.
  5. Finally, add cooked quinoa to the pan and give it a good stir. Serve hot.
