This recipe was created during a time when I was trying to explore more plant-based options in my kitchen. Even non-vegans loved it because of its rich flavours!
Ingredients
- 1 cups quinoa
- 1 cups black beans
- 1 cups corn
- 1 pieces avocado
- 1 pieces lime
- 2 teaspoons cilantro
- 2 teaspoons olive oil
- 1 teaspoons cumin
- to taste grams salt
- to taste grams pepper
Instructions
- Cook the quinoa according to package directions.
- While quinoa is cooking, prepare the dressing by combining the lime juice, olive oil, cumin, salt, and pepper.
- In a large bowl, combine cooked quinoa, black beans, corn, and chopped avocado.
- Pour the dressing over the salad and toss to combine.
- Garnish with fresh cilantro before serving.
