Quinoa Black Bean Salad

Servings: 4 | 30 minutes | 450 kcal

Invented by me during my quest for healthy and delicious vegan recipes. It quickly became a hit among my friends and family.

This recipe was created during a time when I was trying to explore more plant-based options in my kitchen. Even non-vegans loved it because of its rich flavours!

Ingredients

  • 1 cups quinoa
  • 1 cups black beans
  • 1 cups corn
  • 1 pieces avocado
  • 1 pieces lime
  • 2 teaspoons cilantro
  • 2 teaspoons olive oil
  • 1 teaspoons cumin
  • to taste grams salt
  • to taste grams pepper

Instructions

  1. Cook the quinoa according to package directions.
  2. While quinoa is cooking, prepare the dressing by combining the lime juice, olive oil, cumin, salt, and pepper.
  3. In a large bowl, combine cooked quinoa, black beans, corn, and chopped avocado.
  4. Pour the dressing over the salad and toss to combine.
  5. Garnish with fresh cilantro before serving.
