Innovative Quinoa Stir-fry

This recipe was inspired by my visit to a small, vegan cafe in Barcelona. The chef there was known for his creativity and ability to make vegan food taste delicious without compromising on health.

During my travels, I discovered this amazing dish. It' a true showcase of how vegan food can be delicious, satisfying, and innovative.

Ingredients

  • 1 cup Quinoa
  • 2 cups Vegan broth
  • 2 teaspoons Olive oil
  • 2 cups Fresh vegetables (carrots, bell peppers, zucchini)
  • 2 pieces Garlic
  • 1 piece Onion
  • 1 teaspoon Spices (cumin, coriander, turmeric, paprika)
  • 2 teaspoons Fresh herbs (parsley, dill)
  • 1 piece Lemon

Instructions

  1. Rinse the quinoa under cold water until the water runs clear. This will remove its natural coating, making it easier to digest.
  2. In a saucepan, bring the vegan broth to a boil. Add the quinoa, reduce heat to low, cover, and cook until all the liquid is absorbed, about 15 minutes.
  3. While the quinoa is cooking, heat the oil in a skillet. Add the vegetables, garlic, and onion and cook until they are tender.
  4. Stir in the spices and cook for another minute, until they become fragrant.
  5. Fluff the cooked quinoa with a fork and add it to the skillet. Stir until everything is well combined.
  6. Remove from heat and stir in the fresh herbs and lemon juice. Taste and adjust seasonings as needed.
  7. Serve warm. Enjoy your healthy and delicious vegan dish!
