This recipe was inspired by my visit to a small, vegan cafe in Barcelona. The chef there was known for his creativity and ability to make vegan food taste delicious without compromising on health.
During my travels, I discovered this amazing dish. It' a true showcase of how vegan food can be delicious, satisfying, and innovative.
Ingredients
- 1 cup Quinoa
- 2 cups Vegan broth
- 2 teaspoons Olive oil
- 2 cups Fresh vegetables (carrots, bell peppers, zucchini)
- 2 pieces Garlic
- 1 piece Onion
- 1 teaspoon Spices (cumin, coriander, turmeric, paprika)
- 2 teaspoons Fresh herbs (parsley, dill)
- 1 piece Lemon
Instructions
- Rinse the quinoa under cold water until the water runs clear. This will remove its natural coating, making it easier to digest.
- In a saucepan, bring the vegan broth to a boil. Add the quinoa, reduce heat to low, cover, and cook until all the liquid is absorbed, about 15 minutes.
- While the quinoa is cooking, heat the oil in a skillet. Add the vegetables, garlic, and onion and cook until they are tender.
- Stir in the spices and cook for another minute, until they become fragrant.
- Fluff the cooked quinoa with a fork and add it to the skillet. Stir until everything is well combined.
- Remove from heat and stir in the fresh herbs and lemon juice. Taste and adjust seasonings as needed.
- Serve warm. Enjoy your healthy and delicious vegan dish!
