Grilled Corn and Avocado Salad

This recipe was born out of a desire to create a vegan dish with a big flavor punch. I combined a variety of fresh produce and herbs, and the result was this flavorful and refreshing salad.

One summer evening, I was experimenting with some fresh produce from the local farmer' market. I wanted to create a vegan dish that was simple yet bold in flavor. After some trial and error, I came up with this refreshing and flavorful dish.

Ingredients

  • 2 pieces fresh sweet corn
  • 1 pieces avocado
  • 1 cups cherry tomatoes
  • 1/2 pieces red onion
  • 1 cups cilantro
  • 1 pieces lime
  • 2 teaspoons olive oil
  • to taste grams salt
  • to taste grams black pepper

Instructions

  1. Grill the sweet corn until slightly charred and cut the kernels off the cob.
  2. Chop the avocado, cherry tomatoes, and red onion into small pieces.
  3. Chop the cilantro finely.
  4. In a large bowl, combine the corn, avocado, cherry tomatoes, red onion, and cilantro.
  5. Squeeze the juice from the lime over the salad and drizzle with olive oil.
  6. Season with salt and pepper, toss well to combine, and serve immediately.
