One summer evening, I was experimenting with some fresh produce from the local farmer' market. I wanted to create a vegan dish that was simple yet bold in flavor. After some trial and error, I came up with this refreshing and flavorful dish.
Ingredients
- 2 pieces fresh sweet corn
- 1 pieces avocado
- 1 cups cherry tomatoes
- 1/2 pieces red onion
- 1 cups cilantro
- 1 pieces lime
- 2 teaspoons olive oil
- to taste grams salt
- to taste grams black pepper
Instructions
- Grill the sweet corn until slightly charred and cut the kernels off the cob.
- Chop the avocado, cherry tomatoes, and red onion into small pieces.
- Chop the cilantro finely.
- In a large bowl, combine the corn, avocado, cherry tomatoes, red onion, and cilantro.
- Squeeze the juice from the lime over the salad and drizzle with olive oil.
- Season with salt and pepper, toss well to combine, and serve immediately.
