Green Goddess Bowl

This recipe, like many vegan recipes, doesn't have a specific origin or inventor. It' inspired by a mix of different cuisines and food trends, with a focus on fresh, plant-based ingredients.

I was inspired to create this dish while sitting in my garden, surrounded by lush greens. I started to wonder, what if we could make every part of a meal as green as the environment around us? Thus, the idea for the 'Green Goddess Bowl' was born.

Ingredients

  • 100 grams quinoa
  • 2 cups spinach
  • 1 pieces avocado
  • 1 pieces cucumber
  • 1 cups green peas
  • 1 teaspoons mint leaves
  • 1 teaspoons parsley
  • 3 teaspoons green tahini dressing

Instructions

  1. Cook the quinoa according to the package directions. Let it cool.
  2. While the quinoa is cooling, chop the spinach, cucumber, and avocado.
  3. In a large bowl, combine the quinoa, chopped veggies, and green peas.
  4. Drizzle with the green tahini dressing and toss to combine.
  5. Top with mint leaves and parsley before serving.
