I was inspired to create this dish while sitting in my garden, surrounded by lush greens. I started to wonder, what if we could make every part of a meal as green as the environment around us? Thus, the idea for the 'Green Goddess Bowl' was born.
Ingredients
- 100 grams quinoa
- 2 cups spinach
- 1 pieces avocado
- 1 pieces cucumber
- 1 cups green peas
- 1 teaspoons mint leaves
- 1 teaspoons parsley
- 3 teaspoons green tahini dressing
Instructions
- Cook the quinoa according to the package directions. Let it cool.
- While the quinoa is cooling, chop the spinach, cucumber, and avocado.
- In a large bowl, combine the quinoa, chopped veggies, and green peas.
- Drizzle with the green tahini dressing and toss to combine.
- Top with mint leaves and parsley before serving.
