The recipe is a creative blend of ingredients commonly used in vegan diets. It was first invented in my own kitchen, inspired by the need to create a hearty, satisfying vegan dish that is also packed with nutrients.
One of my vegan friends was coming over for dinner and I was feeling adventurous. So, I came up with this recipe. It turned out to be a hit and now it' a staple in my kitchen!
Ingredients
- 4 pieces Sweet potatoes
- 1 cups Chickpeas
- 2 cups Spinach
- 2 teaspoons Olive oil
- 2 pieces Garlic
- 1 teaspoons Cumin
- 1 teaspoons Salt
- 1 teaspoons Pepper
Instructions
- Preheat the oven to 200 degrees Celsius. Place the sweet potatoes on a baking tray and bake for about 45 minutes, or until they're soft.
- While the potatoes are baking, heat the olive oil in a pan and add the garlic. Sauté until it' golden brown.
- Add the chickpeas, cumin, salt, and pepper to the pan. Sauté for a few minutes until the chickpeas are heated through.
- Add the spinach to the pan and cook until it' wilted. Remove from heat.
- Once the sweet potatoes are done, cut them open lengthwise. Stuff each potato with the chickpea and spinach mixture.
- Serve the stuffed sweet potatoes warm. Enjoy!
