Chickpea Salad Sandwich

Ingredients

  • 400 grams chickpeas
  • 2 pieces celery
  • 1 pieces red onion
  • 3 teaspoons vegan mayonnaise
  • 1 teaspoons Dijon mustard
  • 4 pieces whole grain bread
  • 4 pieces lettuce
  • 2 pieces tomato

Instructions

  1. Rinse and drain the chickpeas. Place in a large bowl and mash with a fork until almost all chickpeas are broken up.
  2. Chop the celery and red onion into small pieces. Add to the bowl with the chickpeas.
  3. Add the vegan mayonnaise and Dijon mustard to the bowl. Stir until all ingredients are well combined.
  4. Toast the whole grain bread.
  5. Spread the chickpea salad onto one slice of bread. Top with lettuce and tomato. Place the other slice of bread on top to complete the sandwich.
  6. Repeat with remaining ingredients to make the second sandwich.
