Ingredients
- 400 grams chickpeas
- 2 pieces celery
- 1 pieces red onion
- 3 teaspoons vegan mayonnaise
- 1 teaspoons Dijon mustard
- 4 pieces whole grain bread
- 4 pieces lettuce
- 2 pieces tomato
Instructions
- Rinse and drain the chickpeas. Place in a large bowl and mash with a fork until almost all chickpeas are broken up.
- Chop the celery and red onion into small pieces. Add to the bowl with the chickpeas.
- Add the vegan mayonnaise and Dijon mustard to the bowl. Stir until all ingredients are well combined.
- Toast the whole grain bread.
- Spread the chickpea salad onto one slice of bread. Top with lettuce and tomato. Place the other slice of bread on top to complete the sandwich.
- Repeat with remaining ingredients to make the second sandwich.
