Chickpea Flour Flatbread Pizza with Roasted Vegetables

Whoever said vegans can't enjoy pizza never tried this recipe! This Chickpea Flour Flatbread Pizza is a creative twist on the classic, packing in tons of flavor and nutrients without any animal products.

Ingredients

  • 1 cups chickpea flour
  • 1 cups water
  • 2 teaspoons olive oil
  • 1 teaspoons salt
  • 2 cups assorted vegetables (like bell peppers, zucchini, and cherry tomatoes)
  • 1 cups vegan cheese

Instructions

  1. In a bowl, mix the chickpea flour, water, olive oil, and salt. Let the batter rest for 30 minutes.
  2. While the batter is resting, preheat your oven to 200°C (400°F) and chop your vegetables into bite-sized pieces.
  3. Roast your vegetables in the oven for about 15 minutes, or until they're tender and slightly charred.
  4. After the batter has rested, heat a non-stick pan over medium heat. Pour in half of the batter and spread it out into a thin circle, like a pancake. Cook until the bottom is golden brown, then flip and cook the other side.
  5. Place the cooked flatbread on a baking sheet, top with the roasted vegetables and vegan cheese, and bake in the oven until the cheese is melted and bubbly.
  6. Repeat with the remaining batter and toppings.
  7. Slice and serve your delicious vegan pizza!
