Whoever said vegans can't enjoy pizza never tried this recipe! This Chickpea Flour Flatbread Pizza is a creative twist on the classic, packing in tons of flavor and nutrients without any animal products.
Ingredients
- 1 cups chickpea flour
- 1 cups water
- 2 teaspoons olive oil
- 1 teaspoons salt
- 2 cups assorted vegetables (like bell peppers, zucchini, and cherry tomatoes)
- 1 cups vegan cheese
Instructions
- In a bowl, mix the chickpea flour, water, olive oil, and salt. Let the batter rest for 30 minutes.
- While the batter is resting, preheat your oven to 200°C (400°F) and chop your vegetables into bite-sized pieces.
- Roast your vegetables in the oven for about 15 minutes, or until they're tender and slightly charred.
- After the batter has rested, heat a non-stick pan over medium heat. Pour in half of the batter and spread it out into a thin circle, like a pancake. Cook until the bottom is golden brown, then flip and cook the other side.
- Place the cooked flatbread on a baking sheet, top with the roasted vegetables and vegan cheese, and bake in the oven until the cheese is melted and bubbly.
- Repeat with the remaining batter and toppings.
