Avocado Pasta

This recipe was invented in my kitchen. It' a modern dish that plays on the trend of incorporating more plant-based ingredients into our diets.

One day, I was experimenting with different ways to make my meals more plant-based. As an avid pasta lover, I struggled to let go of the creamy sauces that often come with it. So, I thought about how I could make a creamy and delicious sauce without any animal products and it hit me - avocados! They're creamy, rich and full of healthy fats. And thus, vegan avocado pasta was born.

Ingredients

  • 200 grams Pasta
  • 2 pieces Avocado
  • 2 pieces Garlic
  • 2 teaspoons Lemon juice
  • 2 teaspoons Olive oil
  • 1 teaspoons Salt
  • 1 teaspoons Pepper

Instructions

  1. Cook the pasta according to package instructions.
  2. While the pasta is cooking, in a food processor, combine the avocados, garlic, lemon juice, olive oil, salt, and pepper.
  3. Process until smooth.
  4. When the pasta is done, drain it and mix it with the avocado sauce.
  5. Serve immediately.
