This recipe was invented in my kitchen. It' a modern dish that plays on the trend of incorporating more plant-based ingredients into our diets.
One day, I was experimenting with different ways to make my meals more plant-based. As an avid pasta lover, I struggled to let go of the creamy sauces that often come with it. So, I thought about how I could make a creamy and delicious sauce without any animal products and it hit me - avocados! They're creamy, rich and full of healthy fats. And thus, vegan avocado pasta was born.
Ingredients
- 200 grams Pasta
- 2 pieces Avocado
- 2 pieces Garlic
- 2 teaspoons Lemon juice
- 2 teaspoons Olive oil
- 1 teaspoons Salt
- 1 teaspoons Pepper
Instructions
- Cook the pasta according to package instructions.
- While the pasta is cooking, in a food processor, combine the avocados, garlic, lemon juice, olive oil, salt, and pepper.
- Process until smooth.
- When the pasta is done, drain it and mix it with the avocado sauce.
- Serve immediately.
