Tofurkey with Holiday Spices

While Tofurkey' origins are rooted in vegan adaptations of traditional meat dishes, this particular recipe was born out of a desire to capture holiday flavors in a vegan-friendly manner.

One snowy eve, I was tasked to prepare a festive feast for a group of vegan friends. Intent on not sacrificing the holiday spirit, I whipped up this Tofurkey, and it was an instant hit!

Ingredients

  • 2 pieces Tofu
  • 2 teaspoons Olive oil
  • 1 teaspoons Ground cinnamon
  • 1 teaspoons Ground nutmeg
  • 1 teaspoons Ground cloves
  • 1 teaspoons Salt
  • 1 teaspoons Pepper
  • 2 teaspoons Maple syrup
  • 2 teaspoons Soy sauce

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Drain the tofu and press it to remove as much water as possible.
  3. In a small bowl, combine olive oil, ground spices, salt, pepper, maple syrup, and soy sauce.
  4. Place the tofu in a baking dish and generously brush it with the spice mixture.
  5. Bake for about 45 minutes, or until the edges are golden brown. Baste occasionally with the remaining spice mixture.
  6. Allow to cool slightly before slicing and serving.
