Originally, jackfruit, native to South India, was used in savory dishes centuries ago. With the rise of veganism, this versatile fruit has found its way into Western dishes like tacos as a popular meat substitute.
One evening, after I discovered the wonder of jackfruit' meat-like texture, I decided to try it in a taco. The results were so delicious that I've been making these vegan tacos ever since.
Ingredients
- 2 cups young green jackfruit
- 1 cups taco seasoning
- 2 teaspoons olive oil
- 8 pieces taco shells
- 1 pieces pineapple
- 1 pieces red onion
- 1 cups cilantro
- 2 teaspoons lime juice
- 1 pieces jalapeno
Instructions
- Drain the jackfruit and pat dry. Pull apart the pieces to achieve a shredded texture.
- In a pan, heat the olive oil over medium heat. Add the jackfruit and taco seasoning, stir to coat, and cook for about 10 minutes.
- While the jackfruit is cooking, prepare the pineapple salsa. Chop the pineapple, red onion, and jalapeno. Combine in a bowl with the cilantro and lime juice. Mix well.
- Heat the taco shells according to the package instructions.
- Assemble your tacos by filling each shell with the spicy jackfruit, then topping with the pineapple salsa.
