Mediterranean Quinoa Salad

This dish is inspired by the traditional flavors of the Mediterranean cuisine, offering a healthy and refreshing twist to your everyday salad. Ingredients

  • 1 cup Quinoa
  • 2 cups Water
  • 1 piece Cucumber
  • 1 piece Tomato
  • 1/2 piece Red onion
  • 1/2 cup Kalamata olives
  • 1 piece Red bell pepper
  • 1/4 cup Fresh parsley
  • 1 piece Lemon
  • 2 tablespoons Olive oil
  • to taste Salt and pepper

Instructions

  1. Rinse the quinoa under cold water and drain.
  2. In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce heat to low, cover and let simmer for 15 minutes or until quinoa is tender and the water has been absorbed.
  3. While the quinoa is cooking, chop the cucumber, tomato, red onion, olives, bell pepper, and parsley. Set aside.
  4. In a large bowl, combine the cooked quinoa, chopped vegetables, and parsley.
  5. Squeeze the lemon and add the juice to the salad along with the olive oil. Season with salt and pepper.
  6. Toss everything together until well combined. Serve immediately or let it chill in the fridge for a few hours before serving.
