Ingredients
- 1 cup Quinoa
- 2 cups Water
- 1 piece Cucumber
- 1 piece Tomato
- 1/2 piece Red onion
- 1/2 cup Kalamata olives
- 1 piece Red bell pepper
- 1/4 cup Fresh parsley
- 1 piece Lemon
- 2 tablespoons Olive oil
- to taste Salt and pepper
Instructions
- Rinse the quinoa under cold water and drain.
- In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce heat to low, cover and let simmer for 15 minutes or until quinoa is tender and the water has been absorbed.
- While the quinoa is cooking, chop the cucumber, tomato, red onion, olives, bell pepper, and parsley. Set aside.
- In a large bowl, combine the cooked quinoa, chopped vegetables, and parsley.
- Squeeze the lemon and add the juice to the salad along with the olive oil. Season with salt and pepper.
- Toss everything together until well combined. Serve immediately or let it chill in the fridge for a few hours before serving.
