Ingredients

  • 4 cups Broccoli florets
  • 1 can Coconut milk
  • 2 cloves Garlic, minced
  • 1 medium Onion, chopped
  • 2 cups Vegetable stock
  • 2 tablespoons Olive oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic, and sauté until the onion is soft and translucent.
  3. Add the broccoli florets, salt, and black pepper to the pot and cook for 5 minutes.
  4. Add the vegetable stock and coconut milk and bring to a boil.
  5. Reduce heat and simmer for about 15 minutes, or until the broccoli is tender.
  6. Use an immersion blender to blend the soup until smooth and creamy.
  7. Serve hot and enjoy!
