The origin of fritters is unclear, but there are records of fritters being made all over the world since ancient times. This vegan version was inspired by the classic American fritter recipes.
Fritters can be made with a variety of vegetables and are a great way to use up leftovers!
Ingredients
- 2 cups grated zucchini
- 1/4 cup all-purpose flour
- 1/4 cup cornmeal
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons minced chives
- 1 tablespoon minced parsley
- 3 tablespoons vegan mayonnaise
- 2 tablespoons olive oil
Instructions
- In a large bowl, combine the grated zucchini, flour, cornmeal, baking powder, salt, pepper, chives, and parsley.
- Add the vegan mayonnaise and mix until fully combined.
- Heat the olive oil in a large skillet over medium heat.
- Drop spoonfuls of the mixture into the skillet, flattening them slightly.
- Cook for 5 minutes per side, or until golden brown and cooked through.
- Remove from the skillet and serve warm.
