Pesto is a traditional sauce from the Italian city of Genoa. It was first made by the Genoese in the 16th century as a simple sauce of crushed garlic, basil, and pecorino, and was used as a seasoning for pasta dishes.
Legend has it that the original recipe was created by a fisherman's wife, who had to come up with a way to use the ingredients she had on hand.
Ingredients
- 2 cloves garlic
- 1 cup walnuts
- 3 cups basil leaves
- 1/4 cup extra-virgin olive oil
- 2 tbsp lemon juice
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- In a food processor, combine the garlic, walnuts, basil leaves, olive oil, lemon juice, salt and black pepper.
- Pulse the ingredients until it forms a thick paste.
- Taste and adjust seasoning if needed.
- Serve over cooked pasta and enjoy.
