Teriyaki Tofu Bowls

Servings: 4 | 30 minutes

Ingredients

  • 1 block of extra firm tofu
  • 3 tablespoons of teriyaki sauce
  • 1 teaspoon of garlic powder
  • 2 tablespoons of sesame oil
  • 1 cup of cooked brown rice
  • 1 cup of green peas
  • 1/2 cup of red bell pepper
  • 1/2 cup of carrots
  • 1/4 cup of scallions

Instructions

  1. Preheat your oven to 375°F. Drain and press the tofu to remove excess moisture. Cut the tofu into cubes and place onto a lined baking sheet
  2. In a small bowl, combine the teriyaki sauce, garlic powder and sesame oil. Pour the mixture over the cubes and toss gently to coat
  3. Bake the tofu for 25 minutes, flipping once halfway through. Meanwhile, cook the rice according to package instructions and steam the vegetables
  4. Once the tofu is done, assemble the bowls with the cooked rice, vegetables and tofu. Drizzle with extra teriyaki sauce and serve
