Ingredients
- 1 block of extra firm tofu
- 3 tablespoons of teriyaki sauce
- 1 teaspoon of garlic powder
- 2 tablespoons of sesame oil
- 1 cup of cooked brown rice
- 1 cup of green peas
- 1/2 cup of red bell pepper
- 1/2 cup of carrots
- 1/4 cup of scallions
Instructions
- Preheat your oven to 375°F. Drain and press the tofu to remove excess moisture. Cut the tofu into cubes and place onto a lined baking sheet
- In a small bowl, combine the teriyaki sauce, garlic powder and sesame oil. Pour the mixture over the cubes and toss gently to coat
- Bake the tofu for 25 minutes, flipping once halfway through. Meanwhile, cook the rice according to package instructions and steam the vegetables
- Once the tofu is done, assemble the bowls with the cooked rice, vegetables and tofu. Drizzle with extra teriyaki sauce and serve
