Summer rolls are a traditional dish from Vietnam. They typically consist of shrimp, pork, and vegetables wrapped in a thin rice paper wrapper.

Ingredients
- 1 cup mung bean sprouts
- 2 tbsp rice vinegar
- 2 tbsp soy sauce
- 1 carrot shredded carrot
- 1 cup chopped red bell pepper
- 1 cup chopped cucumber
- 8 sheets rice paper wraps
Instructions
- In a medium bowl, mix mung bean sprouts, rice vinegar, and soy sauce. Set aside.
- In a large bowl, mix together the carrot, bell pepper, and cucumber.
- Soak each sheet of rice paper wrapper in warm water for 30 seconds until it is soft enough to roll.
- Spoon 1/8 of the vegetable mixture into the center of the wrapper. Place 1/8 of the bean mixture on top.
- Fold the ends of the wrapper in and wrap tightly. Set aside and repeat with the remaining ingredients.
- Serve summer rolls with your favorite dipping sauce.
