Summer Rolls

Summer rolls are a traditional dish from Vietnam. They typically consist of shrimp, pork, and vegetables wrapped in a thin rice paper wrapper.

In Vietnam, summer rolls are often served in family gatherings and special occasions.

Ingredients

  • 1 cup mung bean sprouts
  • 2 tbsp rice vinegar
  • 2 tbsp soy sauce
  • 1 carrot shredded carrot
  • 1 cup chopped red bell pepper
  • 1 cup chopped cucumber
  • 8 sheets rice paper wraps

Instructions

  1. In a medium bowl, mix mung bean sprouts, rice vinegar, and soy sauce. Set aside.
  2. In a large bowl, mix together the carrot, bell pepper, and cucumber.
  3. Soak each sheet of rice paper wrapper in warm water for 30 seconds until it is soft enough to roll.
  4. Spoon 1/8 of the vegetable mixture into the center of the wrapper. Place 1/8 of the bean mixture on top.
  5. Fold the ends of the wrapper in and wrap tightly. Set aside and repeat with the remaining ingredients.
  6. Serve summer rolls with your favorite dipping sauce.
