Quinoa Bowl with Roasted Vegetables

Servings: 2 | 20 minutes

Ingredients

  • 1 cup quinoa
  • 1 bell pepper, diced
  • 1/2 cup roasted cashews
  • 2 tablespoons olive oil
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, finely chopped

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. In a large bowl, combine quinoa, bell pepper, cashews, 1 tablespoon olive oil, sea salt, pepper, and garlic. Spread over baking sheet and bake for 15 minutes.
  3. In a small bowl, mix remaining olive oil and parsley. Drizzle over cooked quinoa and vegetables.
  4. Divide quinoa and vegetables into two bowls and serve warm.
