Ingredients
- 1 cup quinoa
- 1 bell pepper, diced
- 1/2 cup roasted cashews
- 2 tablespoons olive oil
- 1/2 teaspoon sea salt
- 1/2 teaspoon black pepper
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, finely chopped
Instructions
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- In a large bowl, combine quinoa, bell pepper, cashews, 1 tablespoon olive oil, sea salt, pepper, and garlic. Spread over baking sheet and bake for 15 minutes.
- In a small bowl, mix remaining olive oil and parsley. Drizzle over cooked quinoa and vegetables.
- Divide quinoa and vegetables into two bowls and serve warm.
