Pad Thai

Pad Thai is a classic Thai dish and is the most popular street food in Thailand. The dish is believed to have been invented during the 1930s in Bangkok, and is now a staple dish all around the world.

Pad Thai has become so popular that in 2012 it was declared the national dish of Thailand!

Ingredients

  • 2 tbsp vegetable oil
  • 3 tbsp tamari soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp brown sugar
  • 1 tsp chilli paste
  • 300 g rice noodles
  • 2 tbsp crushed garlics
  • 1 red pepper, thinly sliced
  • 1 green pepper, thinly sliced
  • 100 g bean sprouts
  • 2 tbsp chopped fresh coriander
  • 2 tbsp chopped peanuts

Instructions

  1. In a bowl, mix together the vegetable oil, tamari soy sauce, rice vinegar, brown sugar and chilli paste.
  2. Cook the rice noodles according to the instructions on the packet. Drain and set aside.
  3. In a large frying pan, heat the oil and add the crushed garlics. Fry for 1 minute.
  4. Add the red and green peppers and fry for a further 2 minutes.
  5. Add the cooked noodles to the pan and pour in the sauce. Stir to combine.
  6. Add the bean sprouts and cook for a further 2-3 minutes or until the vegetables are cooked through.
  7. Serve the pad thai topped with fresh coriander and chopped peanuts.
