Marinara Pasta

Marinara is an Italian sauce traditionally made with tomatoes, garlic, and herbs. It is often served with pasta or other dishes.

Legend has it that marinara was created by Italian fishermen's wives during the 16th century. They would quickly prepare the sauce with ingredients they had on hand after the fishermen returned from the sea.

Ingredients

  • 1 cup soy milk
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 2 cloves garlic, minced
  • 2 cups pasta sauce (preferably vegan)
  • 1 teaspoon sugar
  • 1 tablespoon vegetable broth
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1 pound penne pasta (preferably vegan)

Instructions

  1. Heat the olive oil in a large saucepan over medium heat.
  2. Add the garlic and sauté for 2 minutes, stirring occasionally.
  3. Add the pasta sauce, oregano, sugar, vegetable broth, salt and pepper and stir to combine.
  4. Bring to a boil, reduce the heat to low and simmer for 10 minutes.
  5. Meanwhile, cook the penne pasta according to package instructions.
  6. Add the cooked penne to the sauce and stir to combine.
  7. Serve the marinara pasta warm, garnished with freshly chopped parsley and vegan parmesan cheese, if desired.
