Sweet potato wedges have been a popular side dish for many years. While traditionally deep-fried, this vegan version bakes the wedges in the oven for a healthier version.
These sweet potato wedges are one of my favorite dishes to make. They're so simple, yet so delicious!
Ingredients
- 4 medium sweet potatoes
- 4 tbsp maple syrup
- 2 tbsp olive oil
- 1/4 tsp sea salt
- 1/4 tsp ground pepper
Instructions
- Preheat the oven to 200 °C (400 °F).
- Wash and peel the sweet potatoes.
- Cut the potatoes into wedges.
- In a bowl, mix together the maple syrup, olive oil, salt and pepper.
- Add the sweet potato wedges to the bowl and mix until they are all evenly coated.
- Place the sweet potato wedges onto a baking sheet lined with parchment paper.
- Bake in the oven for 20-25 minutes or until golden brown.
