Lentil and Sweet Potato Curry

Servings: 4 | 30 minutes

Ingredients

  • 2 tablespoons olive oil
  • 2 onions, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon garam masala
  • 2 cups cooked lentils
  • 2 cups diced sweet potato
  • 1 can (13.5 ounces) coconut milk
  • 1/4 cup chopped fresh cilantro
  • Salt and freshly ground pepper, to taste

Instructions

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the onions and garlic and cook until the onions are softened, about 5 minutes.
  3. Add the cumin, coriander, turmeric and garam masala and cook for 1 minute.
  4. Add the lentils, sweet potato, coconut milk and 2 cups of water.
  5. Bring to a simmer and cook until the sweet potatoes are tender, about 10 minutes.
  6. Stir in the cilantro and season with salt and pepper to taste.
  7. Serve hot over cooked rice or quinoa.
