Ingredients
- 2 tablespoons olive oil
- 2 onions, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon garam masala
- 2 cups cooked lentils
- 2 cups diced sweet potato
- 1 can (13.5 ounces) coconut milk
- 1/4 cup chopped fresh cilantro
- Salt and freshly ground pepper, to taste
Instructions
- Heat the olive oil in a large pot over medium-high heat.
- Add the onions and garlic and cook until the onions are softened, about 5 minutes.
- Add the cumin, coriander, turmeric and garam masala and cook for 1 minute.
- Add the lentils, sweet potato, coconut milk and 2 cups of water.
- Bring to a simmer and cook until the sweet potatoes are tender, about 10 minutes.
- Stir in the cilantro and season with salt and pepper to taste.
- Serve hot over cooked rice or quinoa.
