Kale Gnocchi

Gnocchi are a type of Italian dumpling typically made with potatoes and flour, dating back to the Roman Empire. Nowadays, vegan and gluten-free options are available and are just as delicious!

The name 'gnocchi' is derived from the Italian word 'nocchi', which means 'knuckles'.

Ingredients

  • 2 tsp olive oil
  • 2 cloves garlic
  • 2 cups kale
  • 16 oz vegan gnocchi
  • 1.5 cup vegan cheese shreds
  • 0.5 cup chopped parsley
  • 1 tsp red pepper flakes

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute.
  2. Add kale and sauté until wilted, about 3 minutes. Remove from heat.
  3. Add gnocchi to the same skillet and cook, stirring occasionally, until golden brown, about 8 minutes.
  4. Add shredded cheese, parsley, and red pepper flakes, stirring until cheese is melted.
  5. Return kale to the skillet and stir to combine. Let cook for 1 minute. Serve and enjoy!
