Ingredients
- 2 tsp olive oil
- 2 cloves garlic
- 2 cups kale
- 16 oz vegan gnocchi
- 1.5 cup vegan cheese shreds
- 0.5 cup chopped parsley
- 1 tsp red pepper flakes
Instructions
- Heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute.
- Add kale and sauté until wilted, about 3 minutes. Remove from heat.
- Add gnocchi to the same skillet and cook, stirring occasionally, until golden brown, about 8 minutes.
- Add shredded cheese, parsley, and red pepper flakes, stirring until cheese is melted.
- Return kale to the skillet and stir to combine. Let cook for 1 minute. Serve and enjoy!
