Fried Rice

Fried rice has its origins in Asia and has been a popular dish for centuries. The vegan version of this dish is a modern twist on a classic.

The key to making the perfect vegan fried rice is to make sure the ingredients are well-seasoned and cooked through.

Ingredients

  • 1 tablespoon vegetable oil
  • 1/2 cup onion, diced
  • 1 cup frozen mixed vegetables
  • 3 cups cooked brown rice
  • 2 tablespoons reduced-sodium soy sauce
  • 1/4 teaspoon ground pepper

Instructions

  1. Heat oil in a large skillet over medium heat. Add onion and cook, stirring occasionally, until softened, about 4 minutes.
  2. Add frozen vegetables and cook, stirring occasionally, until thawed, about 3 minutes.
  3. Add cooked rice and soy sauce; cook, stirring occasionally, until heated through, about 3 minutes.
  4. Stir in pepper; cook until fragrant, about 1 minute.
  5. Divide fried rice among 2 plates and serve.
