Curry Stir-Fry

Curry has been a popular dish in India for centuries. It's traditionally a combination of spices, vegetables, and/or meat, simmered in a sauce. This vegan version of curry is inspired by the traditional Indian dish, but uses vegetables for a plant-based version.

This vegan curry stir-fry is sure to be a hit with family and friends! It's a flavorful and healthy dish that can be made in minutes.

Ingredients

  • 2 tbsp vegetable oil
  • 1 cup chopped onion
  • 1 tbsp minced garlic
  • 1 tbsp minced ginger
  • 2 tsp curry powder
  • 2 tsp cumin powder
  • 1 tsp turmeric powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup vegetables, diced
  • 1 can coconut milk
  • 1 cup chopped cilantro

Instructions

  1. Heat oil in a large skillet over medium-high heat.
  2. Add onion and cook for 3-4 minutes, until softened.
  3. Add garlic, ginger, curry powder, cumin powder, turmeric, salt, and pepper and cook for 1 minute.
  4. Add the vegetables and stir to combine. Cover and cook for 4-5 minutes, stirring occasionally.
  5. Stir in the coconut milk and cilantro and simmer for 1-2 minutes.
