Curry has been a popular dish in India for centuries. It's traditionally a combination of spices, vegetables, and/or meat, simmered in a sauce. This vegan version of curry is inspired by the traditional Indian dish, but uses vegetables for a plant-based version.

Ingredients
- 2 tbsp vegetable oil
- 1 cup chopped onion
- 1 tbsp minced garlic
- 1 tbsp minced ginger
- 2 tsp curry powder
- 2 tsp cumin powder
- 1 tsp turmeric powder
- 1 tsp salt
- 1 tsp black pepper
- 1 cup vegetables, diced
- 1 can coconut milk
- 1 cup chopped cilantro
Instructions
- Heat oil in a large skillet over medium-high heat.
- Add onion and cook for 3-4 minutes, until softened.
- Add garlic, ginger, curry powder, cumin powder, turmeric, salt, and pepper and cook for 1 minute.
- Add the vegetables and stir to combine. Cover and cook for 4-5 minutes, stirring occasionally.
- Stir in the coconut milk and cilantro and simmer for 1-2 minutes.
