Ingredients

  • 1 tbsp olive oil
  • 1 tsp cumin seeds
  • 3 cloves garlic
  • 1 medium onion
  • 1 can black beans
  • 1 cup walnuts
  • 2 tbsp nutritional yeast
  • 1 tbsp soy sauce
  • 2 tbsp maple syrup
  • 1 tbsp chili powder
  • 2 tbsp smoked paprika

Instructions

  1. Heat the olive oil in a medium skillet over medium heat. Add the cumin seeds and garlic and cook until fragrant.
  2. Add the onion and cook until softened, about 5 minutes.
  3. Add the black beans and walnuts to the skillet and cook until the walnuts are toasted, about 5 minutes.
  4. Add the nutritional yeast, soy sauce, maple syrup, chili powder, and smoked paprika. Cook until everything is combined and heated through, about 5 minutes.
  5. Transfer the mixture to a food processor and blend until smooth.
  6. Serve the vegan chorizo with tacos, burritos, or over rice.
