This vegan salad is a variation of a traditional Finnish salad called 'Hernekeitto', which is made with green peas and potatoes.
The traditional Finnish salad is often served with a boiled egg and bacon, but this vegan version uses chickpeas and avocado to make it plant-based friendly!
Ingredients
- 1 can chickpeas
- 1 avocado
- 2 tbsp chopped parsley
- 1 tbsp lemon juice
- 1 spring onion
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Drain and rinse the canned chickpeas.
- Cut the avocado into cubes.
- Mix the drained chickpeas, avocado cubes, chopped parsley and spring onion in a bowl.
- In a separate bowl, mix together the lemon juice, ground cumin, ground coriander, salt and black pepper.
- Pour the dressing over the salad and mix well.
