Chickpea & Avocado Salad

This vegan salad is a variation of a traditional Finnish salad called 'Hernekeitto', which is made with green peas and potatoes.

The traditional Finnish salad is often served with a boiled egg and bacon, but this vegan version uses chickpeas and avocado to make it plant-based friendly!

Ingredients

  • 1 can chickpeas
  • 1 avocado
  • 2 tbsp chopped parsley
  • 1 tbsp lemon juice
  • 1 spring onion
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Drain and rinse the canned chickpeas.
  2. Cut the avocado into cubes.
  3. Mix the drained chickpeas, avocado cubes, chopped parsley and spring onion in a bowl.
  4. In a separate bowl, mix together the lemon juice, ground cumin, ground coriander, salt and black pepper.
  5. Pour the dressing over the salad and mix well.
