Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon freshly grated ginger
- 1 head cauliflower, cut into florets
- 1 apple, diced
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 1 teaspoon garam masala
- 1/4 teaspoon cayenne pepper
- 1 (14-ounce) can light coconut milk
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- juice of 1 lime
- salt, to taste
Instructions
- Heat oil in a large skillet over medium heat. Add onion and sauté for 5 minutes.
- Add garlic and ginger and sauté for another 2 minutes.
- Add cauliflower, apple, coriander, cumin, turmeric, garam masala, and cayenne pepper and stir to combine.
- Add coconut milk and bring to a boil. Reduce heat to low and simmer for 10–15 minutes until the vegetables are tender.
- Turn off heat and stir in cilantro, mint, and lime juice.
- Season with salt to taste.
- Serve over cooked rice or quinoa.
