Cauliflower Apple Curry

Servings: 4 | 25 minutes

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 1 head cauliflower, cut into florets
  • 1 apple, diced
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon garam masala
  • 1/4 teaspoon cayenne pepper
  • 1 (14-ounce) can light coconut milk
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • juice of 1 lime
  • salt, to taste

Instructions

  1. Heat oil in a large skillet over medium heat. Add onion and sauté for 5 minutes.
  2. Add garlic and ginger and sauté for another 2 minutes.
  3. Add cauliflower, apple, coriander, cumin, turmeric, garam masala, and cayenne pepper and stir to combine.
  4. Add coconut milk and bring to a boil. Reduce heat to low and simmer for 10–15 minutes until the vegetables are tender.
  5. Turn off heat and stir in cilantro, mint, and lime juice.
  6. Season with salt to taste.
  7. Serve over cooked rice or quinoa.
